I can solve your problem as I had the same one on my Tag Heuer 2000 Classic Multigraph WK111A.BA0331, just recieved last week. A few minutes ago I was finally able to get the company to send me a PDF file with the instructions, and you definitely need them. Email me your address and I will send you this file with my comliments.

Tag Multigraph: With the crown pushed in you turn the winder quickly a couple of times and the digital displays appear. Scroll through to the function you want then pull the crown out and turn it to change time/settings. The time can be changed either by pulling the crown out on the T setting (digital) or when no digital display is shown on the dial. If you turn the winder slowly the time/settings change very slowly, which is barely visible. If you flick the winder round very quickly the settings leap forward faster.
