Question about Pitco Frialator 35CS Deep Fryer

Fryer works then shuts down

The fryer works for hours then for no reason it shuts off I have to hit the reset button to light pilot the oil seem to be very hot well over 350 that I have thermostat set at can this be thermostat or hi limit switch

I think that its is a hi limit switch to prevent a oil fire the fryers at kfc would dothis everyso often and it turned out tobe a bad logicalboard somewhere, check all valves and the switches on them to make sure that the fryer is aware when they are open or closed? let me know if you need more info

When I light my Pilot on my Fryer it will not stay lit long enough to light the fryer. What can i do?


There are several possible causes of this problem, aside from a loose or damaged wire, which is uncommon. The cause in about 95% of the cases is a thermopile that has gone bad. The thermopile is the small cylinder that is attached to the pilot assembly where part of the pilot flame can contact it. It has a cable or wire going to the gas valve, high limit switch, or both. The burners will not light. The pilot does light. I had my staff try to hit anything that looked a reset, but I don't know if the high limit switch has a reset or if the switch itself is bad.


The high limit switch has nothing to do with the pilot light, but will shut down the main burners. It the pilot light will not stay lit, then it is most likely the thermocouple. If the pilot light will not light at all, then gas is not reaching the pilot. Most likely, the pilot light tube is clogged with grease. When you push on the button to light the pilot, you are overriding all safeties inside the unit and sending gas to the pilot. Also make sure that the unit itself is getting gas. New regulations require a shut off within the hose that feeds the appliance which will shut off due to a surge of gas through the hose. To reset it, disconnect/reconnect the hose at the intake end and when you turn the gas back on, turn it on slowly.

I have replaced the thermacouple on my pitco fryer but the reset button keeps kicking out,shutting off the pilot.\r\n can you help me? thank you in advance.


If the reset button trips on low oil temperature, check and make sure that its sensing bulb located inside the fry tank does not touches the fire tube. This device is called the hi limit, it is the unit's safety device designed to shut the pilot flame when oil temperature reaches 450F.

A pitco frialator in a restaurant will operate for about 5-6 hours and then blow the pilot light and burner out. I have put a thermometer in the oil, watched it work and the oil temps wont exceed 375...


I assume that the thermometer you are using is calibrated. You have to check the continuity on the hi limit terminals once the pilot light shuts off. If it has no reading, the hi limit trips prematurely and it needs replacement.

Pilot light


Assuming that your make up air and exhaust hood are properly balanced, no negetive pressure conditions exist, your gas manifold pressure is at 4" wc, your air/gas mix on the burner set correctly, the your problem would be the pilot adjustment. If the flame is not intense enough flame to survive the sudden air shock, it will go out.

The pilot height should be about 1 1/2". Your Pilot orfice could also need cleaning. Eliminate excessive draft in your kitchen.

Problems with fryer


your problem is the thermostat is bad.the reason it shuts down is that it trips the hi limit.the hi limit is a saftey device that shuts the system down so the oil doesnt get too hot and catch on fire.remove all the oil from the tank and you should see 2 skinny metal bulbs one is the hi limit bulb the other is the t-stat bulb,make sure they are secured to the bracket.if the t-stat bulb isnt you will also have this issue,simply reattach it.let me know.
