Replace cartridge, lift from front top, put your hand right into the open area where paper goes , just enough to get a grip of the entire top and lift up, turn printer on so cartridges are on the right side then just lightly push the front of cartridge and it pops out, install new ones

Does the HP 2575 have a chip that remembers the ink cartridge so that you cannot refill it but have to have a different cartridge?

All chips are on the cartridge itself, most refillers put a similar chip on their cartridge to fool the printer but the process is not without its flaws.
Always best to buy genuine ink as it lasts longer anyway and saves plenty headaches!
