I'm trying to locate the oil sending unit on a 2001 plymouth neon

How many miles on the car? I recommend hooking up a direct reading oil pressure guage. Oil level is not the only factor on oil pressure. As an engine ages, clearances and bearings wear and the pressure falls. Using too thin oil can result in low pressure.

Oil light stays on until you reach 2000 rpm's. Is it the Oil Sending Unit?

Oil light coming on usually means low oil pressure. IE: low oil, pump worn and possibly the sending unit. Before buying a new oil pressure switch you can try cleaning it by removing sender and soak lower part (that screws into engine) in parts or carb cleaner. Sometimes they stick and get gummed up.

2000 Plymouth Neon leaks oil at high speeds only; it starts leaking about 45mph not sure what, or where it is coming from.

there is a special dye that you can buy that gives the oil some color making it easy to see where the leak is coming from
