I have just bought a fuji z35 camera and when I switched it on for the first time it has come on in chinese, and I can't understand the menus to change it back to english please help

Unless you have a friend who can read Chinese, you will need to go into the menu and go through each menu and sub-menu until you come across the word "english" at which point you would press the select/ok button.

I have a fujifilm finepix z35 camera and i need to access the depth of focus and shutter speed settings for a project for college but I don't know how to do this. Does anyone know?

Like most point&shoot cameras the Z35 doesn't give you much direct control over "minor" things like aperture and shutter speed. It's designed for you to simply point and shoot.

You have some control however, by selecting a scene mode. Portrait mode, for example, will attempt to open up the aperture to minimize depth of field, which tends to result in a faster shutter speed. Landscape mode, on the other hand, will attempt to close down the aperture to maximize depth of field, resulting in a slower shutter speed.

SD CARD DOES NOT SHOW PICTURES ALREADY ON IT IN FUJI Z35

Your previous camera wasn't another Z35, was it? Most cameras will not display pictures that were taken with another camera. The old pictures are most likely still on the card. You can plug the card into a card reader and transfer them to a computer.
