Find another mechanic. T stats are automatic on any coolant problem. I could have told you up front the head gaskets were bad. Get away from these point and fix people. The aren't even shade tree mechanics. Could be this, could be that.. I say, this is the problem.

Trying to burp cooling system, but when car heats up the coolant shoots out of the radiator like a fountain.. Thermostat is removed, still heats up

You are correct in your suspicions.
The thermostat blocks flow thru the radiator to help the engine warm up. The coolant still flows thru the block with the thermostat closed. If you remove the thermostat the cooling system should flow thru the radiator and stay below 160 degrees if the air temp is below 90.
If the thermostat is out and the engine is getting hot at idle speed, either the water pump has failed, or there is another blockage in the engine block.

Radiator has a blockage, it can be removed and taken to a shop to be cleaned out, or a new one can be found on line for a little less than $100.

We own an apartment building that has the old radiator steam heat powered by a gas bolier .. It heats 11 apartments and 3 store fronts. recently 1 of the apartments called and said that they were not...

the steam is not flowing to that radiator because of a blockage in the pipe or radiator, the valve may have an obstruction or the radiator is water bound. Remove the vent and see if the heat improves. If not, you have a blockage in pipe or valve.

Condensate pipe on baxi105he was frozen i have unblocked however still flashing fault led and not working

My Baxi also developed this issue about 1 hour ago. I have about 4m of pipe outside and the blockage is in there.
Inside the bolier on the right I have a clear chamber where the water gathers. Is this still full on yours? If so your blockage is not clear. If it is clear I reset my boiler by using the left most dial and turning it anticlockwise past water/radiator for 5 secs. Should fire up if all is |OK

Heating problem

most anccent cars have this problem of heating, here what we do is to replace the radiator with a double cell radiator, if it is single, and or check for blockage of the water circulating system,or on the other hand if the water pump is bad it can course heating problem check the water pump as well.
