When the ink is low: Press one of the Menu buttons until Change Cartridge appears on the LCD panel, and then press the Color Copy button.

If it won't detect the black cartridge and you went into the printer settings and enabled the black to print as well as the color, then the printer sensor that senses new cartridges and amount of ink level is defective and, unless it is under warranty, it's not worth fixing.

Epson have designed their cartridges so that refilling is virtually impossible. Believe me a LOT of money has gone into this so I would forget about trying to refill your original cartridges.
Instead I would recommend locating a reseller for refillable cartridges with a resettable chip... Also, be very careful buying any old ink as there are some very cheap, poor quality inks available which are more likely to clog your printhead and drive you crazy. Good brands to consider are Image Specialists, hobbicolors and OCP but there are others out there.
