That is usually caused by a build up of fat from microwave cooking on the heating element. It will clear under normal conditions and return if one cooks foods like bacon etc, un covered to prevent splashing of the food that is being cooked. Hope that helps.

When convection mode is used heater inside gets heated and as you say that the previous owner never used this mode,when ever the heater used for the first time it may produce smoke as the coating over it heats up giving smoke,no need to worry use it regularly it will work perfectly
If you press "convection" the oven works just like a regular oven except that the element is on top. In "microwave" it works like a microwave oven. All you have to do is decide which mode you want to use and then punch in the time and hit "start". The glass plate is not really a necessity as long as you make sure there is a load in the oven when you are "microwaving".
