This is probally a water flow thing. Check your filter and baskets for clean and your impeller for junk in itbu reaching into the pump from the hole behind the basket with long nose pliers. Then ck your by-pass if you have one to be sure it's almost closed. This will be a valve between the intake and outlet pipes. When closed it forces water through the heater. If not any of those you have an internal by-pass in the manifold of the heater itself. This requires breaking the heater down and pulling the manifold off. So get out the book or you may want to get a repairman involved at this point but check the other things first.

I have a Teledyne Laars XE pool and Spa Heater Type EG 125. The pilot light lites fine. When I turn on the heater to heat the spa, it lights and runs for about 2 minutes and then goes out. If I try it...

Do you at any time lose the pilot?
You will need an electrical test meter that will test for DC-millivolts. Start at the valve and work your way thru all of the safety sensors. Check and make sure you have adequate water flow. It is very likely your temp-control is causing the failure but with the millivolt heaters you really need to follow the voltage. Be very careful while working on Millivolt heater as they can be very unpredictable and dangerous.

The heater keeps shutting off, i unplug and wait a few minutes, then try again it works for a few more minutes then shuts off again.

Defective thermostat is shutting it down before it reaches the correct temperature. Essentially the thermostat is acting too sensitive.

Finding parts could be tricky probably worth replacing for the potential repair cost.
