To uninstall Skype, quit Skype, open your Applications folder and sadly
drag your copy of Skype to the trash. Your user information, including
your Contacts list and call log, is retained on your computer in case
you should decide to try Skype again at a later date. These files can be
found in "username/Library/Skype". This directory containing harmless
data can also be deleted.
Do you tried to uninstall it because 2.8 update is having problems with address book , then you need not do it because here is the process to fix this Bug.
Snow Leopard will work with Skype if you do the following:
1 - Go to your Applications folder in Finder
2 - Select Address Book but don't launch it
3 - Choose Finder's "File > Get Info" menu item
4 - Check the "Open in 32-bit mode" checkbox
5 - Launch Address Book again
