Question about Sunbeam 5891 Bread Maker

I've had the Sunbeam Bread machine for 6 yrs. and have had great success with it, but lately I've had problems with the bread rising, and today the whole center of the bread was caved it when I took it out. This has never happened before, what could have happened? Could it have been the yeast? I use Hodgsons Mills yeast and the expiration date is 2011. Thank you, L. Morceau

Hi,
You might try buying a few of those little packets of yeast. Then try the same recipe that you have been using. If the loaf falls again then your yeast isn't the problem. Recheck your recipe again and be sure you are measuring everything correctly. By the way in baking bread I always use flour marked "bread flour". I never use "all purpose flour" because of poor results in the beginning. I ebay machines all the time and have several in stock if you decide you need one let me know.

go google and type in--operators manual for sunbeam bread maker model 4811-- and if there is a manual available in pdf version down load it
just be aware that with these machines there is a period in the program where after the needing process, it stops for a period to allow the dough to rise before it goes to the cook process
most machines work on the same principle so if you can not find a sunbeam manual see what else is available and check it out

Bread won't rise....


Forget the white bread recipe in the Cuisinart book. There is an error in it. Is that the one you were trying to bake?

Bread does not rise


Make sure you are using the correct type of yeast. The old style active dry yeast is not as good. I recommend that you try Red Star Quick Rise Instant Dry yeast. Also be sure to store the yeast in the refrigerator. And, if you are not using a mix, try King Arthur Flour, it costs a bit more, but their tighter standards means you get more consistent results. I do not know what the correct temperature range should be, but may I suggest a trying new batch of fresh yeast. ( Just in case you batch has absorbed some moisture, preventing it rising. )

You have to use Active Dry yeast with this machine. Standard Quick Rise aka For Bread Machines yeast will over proof. Try Red Star Active Dry Yeast in the red packet, jar, brick, not the white. Active Dry yeast was made to proof with water, however professional bakers discovered it can be added dry, without proving, this is how you should use it. Red Star Active Dry yeast has a much better, stronger yeast smell, better flavor then Quick Rise/Machine yeast.

Hi,
I usually take the paddle out of the machine at the end of the kneading cycle and before the rise cycle. (Do this with the pan out of the machine..just in case). You don't want to use anything in the pan that will scratch it. Usually a few quick taps of the bread pan on the cutting board will free the bread.

liquids, dry ingredients, then yeast last

when adding yeast, make a sort of crater in the middle of the dry ingredients and put the yeast in that pit

if recipe has salt, sprinkle it around the outside of the dry ingredients so that it's away from the yeast; helps the bread rise better

Bread is overly dry and coarse textured


You're doing everything great with your ingredients. Listen to your machine or watch it. Stop it before the bread is in the rise cycle and restart it after the kneading cycle.Try running the knead cycle two times, then the rest of the baking cycle. If the bread is still too hard try using the kneading cycle three times. This process is trial and error, but I firmly believe this will solve your problem as it did mine.

Kneading blade keeps baking into the bread- help!


Watch/listen to the machine your machine. After the last knead cycle, remove the paddle from the bake pan before the dough rises, continue to bake as normal.
