Sounds like a dirty or stuck striker switch. Every knob has a small switch on it's base. One by one, disconnect each switch and see if it keeps auto starting. When you find the bad one, try cleaning it and if that doesn't help, replace it.

Just moved in, used stove for the first time, a little red light won't turn off.

You might need to turn off the stove entirely. If there is even one function slightly on, the red light may not turn off. Try unplugging the stove if you can't figure out why its not off still.

My Jenn Air Electric stove is making a clicking noise. When I put my hand on one of the cook top knobs I can actually feel a vibration when the click occurs. What is this?

Gas stove? LP? It is probably the electric spark ignitor. Many times when you clean the stove top water from the sponge gets below. The water droplets (align mysteriously) make the connection between the wires, and the stove thinks it's supposed to be igniting. When the water evaporates, the switch will work fine again & the clicking should only occur when igniting & then backed off.

This happened to me once before.

3 of 4 knobs do not compress to turn on gas

You must replace those controls. Cleaning or loosening them up would be temporary at best and the next time they stick it could be in the open position. Safety first...Eric
