Yes, you can start a Honda Fourtrax 350 2003 without the display. All you need to do is turn the key to the "on" position and press the start button. The display is not necessary for the quad to start.
This is the drive system for your quad... it take all the engine power and transfers it to the rear wheels,, its going to get hot,, If it starts smoking real bad... and smells worse.. drop by your local Suzuki dealer and talk to the service manager,, get his opinion.
The hose between the carburator and the block is probably cracked and sucking in air. Sometimes you can just put some electrical tape around it and it will work for a while, but it may need replaced.
Spews smoke and then stops? Worn valve guides or worn valve guide seals. Quick way to tell: take it for a ride with someone on another bike / car behind you. Use engine braking. Puff of smoke? Probably seals. Bright side: These engines are dead easy to work on.
I would do a compression test first and determine if there is an adequate seal.. if the smoke blue than that could indicate blow by.. also did it loose power when this happened ??... take a look @ the plug for oil indicating incomplete combustion.
