1999 kolpak walkin freezer not staying cold

Is the compressor cycling on and off? Is there any oil around fittings at components? Gas is the last thing you put in a refrigeration system. You need to find the leak before you put any more gas in the system. Hope this helps good luck.

On the ceiling in the walk-in freezer drops of water frozen around the area by the fans

That tells me that when the evaporator defrost the water condensate is not draining to the outside of your freezer. You will need to find the drain blockage, Thanks Sea Breeze

Kolpak walk-in hinge adjustment

I have a similar problem. Mine is due to the plastic hardware in the hinge being worn down.  The temporary fix has been to disassemble the hinges and pull out the top and bottom "slanted plastic-gravity-activated thingies"  These cause the door to close from the action of gravity and the weight of the door. These plug into the hinge on the refrigerator shell and look like a 3/8" hex-key. Once you have removed those inspect them for wear.  If your problem is anything like mine, not only has the door started to rub against the floor but the spring-activated door closer seems to be out of alignment too.  This is because the plastic on the "slanted plastic-gravity-activated thingies" have worn out and in-as-such with every open and close the door has made a slow and steady journey to being closer to the floor.  While you're waiting for a Kolpak rep to get back to you or what-have-you a temporary solution is to find two small nuts of equal size and drop them into each of the holes where your s.p.g.a.t plug in.  (Be sure sure that they're small enough to get back out!  On my first try I threw in a few small washers that didn't quite fit and it took some growling and maneuvering with needle-nose pliers to get them back out.)
To say nothing of the two-person-job of getting the hinges and screws lined up, you can now reassemble the door and ignore the problem until the s.p.g.a.t. wear down further or your Kolpak rep finally gets back to you...whichever takes longer really (I kid..I kid -- they're alright.)
