Question about Refrigerators
Did you check the defrost heater with a meter before deciding to replace the thermo? Also check the defrost timer to see if it is advancing. These two components are more likely to fail than the defrost thermostat. The defrost timer is located in the temp control box in the refrigerator compartment. It should look like this:
On one side there is a little round cam that you can turn with a flat screwdriver. Turn it until it clicks. When it does, it should should shut off the compressor and turn on the defrost heater for about 40 minutes. If your defrost heater/thermostat is good you should hear the crackling of the ice melting in evap coil. If not, then either the wiring or the heater is bad. After 40 minutes the compressor should come back on. If it does not, then the defrost timer is not advancing and needs to be replaced. Hope this helps you.

Tips for a great answer:
Since the fridge has cooling the compressor /gas pressure is good.It is possible that the frost has blocked the cool air flow from the freezer to the fridge area.
To confirm shut off the fridge, Now after about 6 hours plug in the fridge to start. Observe cooling to happen in about one hour and ice to from under three hours.
Earlier make sure that the thermostat was set to normal mode for freezer and fridge. However if Ice forms then observe the fridge for about 24 hours for cooling to continue and the fridge to cut off . If not the auto defrost timer, or the thermostat must be checked.
If defrost timer works but frost keeps forming check while the compressor shuts if the heaters are working, check continuity of the heaters.
So try this test from the outside and make your observations so that we come to the solution. The defrost timer is located at the bottom, check the connections to the heaters and the thermostat.
