On my Epicure, you are supposed to press the bake selector pad then press the + button to set the temperature to 500 degrees or higher. Then hold the bake button for 5 seconds. The temp display is replaced by 00. Release the bake pad and use the - or+ buttons to adjust the temperature in 5 degree increments. When finished push cancel (or just do nothing). Good luck.
