Instructions for a Brinkmann Smoke 'n Grill

Could you please help me and tell how to use my Smoke n Grill. Does the coal go in the bottom tray and the chips in the top tray or is it the opposite, would appreciate your help.

Sure...the smoker top and middle lift off. There is a pan that goes over the charcoal pit. The pan is used to create moist heat. It will produce steam while you cook. I recommend flavoring whatever fluid you put in the pan with fruit, fruit juice, or frozen concentrate, or wine, mixed with water. You can put your initial batch of charcoal in the bottom, (pit) and fire it up just as you would any charcoal grill. once the coals are ready, you can put the pan over them, put the middle section in, (with whatever meat you prefer), then finally the top. During cooking, to produce a smoky flavor, you can put water soaked hickory or misquete chips with the charcoal, it has a door for access. You can also add charcoal as needed to maintain the desired heat level thru the door. Remember, it takes longer to prepare food on the smoker, the key is low heat and longer cooking times. For example, I usually cook a boston **** at about 185 degrees for up to 12 hours. Bon Appetite!

Whether it is electric or charcoal it really makes no diff. This is a sweet machine!. Your fire is on bottom your water pan is above that. you meat is at the top. This makes the heat be indirect on the meat. You pour in some liquid smoke into your water pan. Rum your meat good. Low and slow is the theme here. Oh yeah you can set it up to grill away. The heat source pan and grill can all be rearranged but this baby is built to smoke! Low and slow.

How do you condition a new grill?


Start some coals with the grate off the grill. As the coals are heating up, coat the grate in *vegetable* shortening using a paper towel. Place the grate back on the grill over the hot coals and cover. Allow the coals to burn off; this process will coat the grate with a protective layer of oil.

You might also consider running the grate through a burnoff process BEFORE curing to remove any coating the manufacturer used for protection during shipping. To do this, burn some coals for roughly 30 minutes under the grate with the lid down, let cool, then condition per previous instructions.

The basics of this unit is, load up the charcoal pan, fill the water tray up about 2/3 full, have some wood chips soaking overnight, pick your favorite recipe for a smoker (try smoker burgers!) umm and easy for the first try.

Get your charcoal going assuming not the electric model, place the meat on the grills, close lid, try to maintain about 225 temps, add your soaked chips on top of the coals, check you temps, add more charcoal when the temps start to drop on long cooks. You should be able to smoke some burgers in about an hour and a half. Low temps and slow cooking is the key.

How to maintain a tempature of 225-250 for long periods of time with no accessories?


There is a small circular shaped plate on the bottom and the top that has holes in it. These holes are there to align with similar holes in the body of the smoker. As you stoke the charcoal and get a good hot coal bed then you can adjust the amount of fresh air that makes it to the fire. This will help you maintain a more constant temp. Though you will need to constantly watch to see if it is maintaining. If not you will need to adjust accordingly. Hope this helps. Good luck.

Do wood chips go in water or coals


wood chips and chunks go on coals if using chips you may want to soak in water so they wont burn so fast

Low temperature


I have the same smoker but not this problem. Is it possible that you have not let the coal get hot enough prior to putting your meat in it. When I feel that the temp is not hot enough I try to leave a little crack with the lid to allow air to flow from bottom to top stoking the coal. When you get the nack of it, this thing cooks an awesome turkey.
