Sounds like a defrost problem. Check to see if
there is any frost buildup in the back wall of the freezer. If so, it is not
defrosting as it should.

One thing that can cause this s the removal of the styrofoam block that surrounds the water reservoir. A lot of people think this is just for shipping but it is necessary to prevent the water freezing.
If it is missing it ill need to be replaced.

Couldn't find a fix on the net reported, but it's going to be the control for the dispenser door, and that's not going to be fun to work on. You might call a local repair shop to see how much.
Otherwise, bug Viking, since they've had a lot of problems with this type of thing- maybe they can assist you.
