There are many ways to set tax - add in, add on, tax tables etc. If you look under various programming in your manual, it should give you the different options. If you need a manual, http://the-checkout-tech.com/manuals/cashregisters/Casio_PCR-272_operation_and_programming_manual.html

In the manual for the Casio PCR T275, it does not state clearly how to program a tax rate. What is the key sequence to set a tax rate of 12% for products? Thanks.

The tax can be set through the help menu. Press HELP then select 2 for tax and it will lead you through.
