You need to be connecting the TV and the Sky Plus to the HT box via optical (toslink) for full surround sound. As you only have one optical port on the HT, I would suggest buying a Optical selector such as this one. I would also suggest looking on avforums more more help. I use it for most of my questions if ever i need any help.

There are two things that I can suggest.
1-Test your optical cables to make sure they a good on a known working source because they are very fragile and break very easily.
2-Try to eliminate the use of optical output from tv to receiver. There may be a problem from the HDMI to optical conversion at the tv. Instead, try running the audio directly from the source to the receiver, and let the tv deal with video input only.

Had a similar problem mate. I solved it by connecting the tv to the PT460 system with a scart lead. You then have to have the AV channel selected on the PT460 system to listen to the tv. You will always have to have the AV channel on the PT460 selected to listen to any sound transmitted through the tv - be it playstation/xbox or any other device that you may connect in the future with HDMI leads or otherwise. To get sound from any TV (including Philips) to an amplifier or a home cinema system, the TV should have a LINE OUT RCA pair. Thereafter, it is a simple case of connecting said Line OUt to one of the INPUTs of the cinema system.
Often (but not all), Cinema Systems have their own TV tuner and would provide a video out that could be connected to the Video IN of the TV.

Firstly connect your home theatre outpu HDMI to HDMI input1 on the TV. Then connect the PS£ HDMI to the other HDMI input on the TV. Now connected the optical cable from the PS3 to the optical input of the home cinema system. Your should now have surround sound from the PS3 and DVD.
