My machine km 500 maf is now making ice very slowly. every 35 minutes for one load it has not been able to fill the tub up at this pace in over 3 days.

time the cycle. if it is only running about 5 minutes and going into harvest, look for sump loosing water. Look at where the unit drains (like a floor drain) while the unit is running to see how much, if any water is draining. does not take much to make an early harvest. also, sump may not be filling up completely but with just enough water to satisfy the float.
if you are sure the float swith is good and the dip switches on the board are correct, you most likely have a bad 1 minute timer on the control board. will have to replace board.
cycle is, fill cycle for 1 minute first. If there is not water entering the unit when first turned on, look for that issue. Water turned off, water valve not working or some restriction, clogged water filters, etc. That is got to happen first. Don't over look the bin stat being bad. Nothing happens if teh bin stat is bad. It sends voltage to the control board that runs the unit.
Look for a stuck float switch. unit fills with water for 1 minute, then the board "looks" at the float to "see" if there is enough water in the unit to run. If float switch is stuck down, it tells the unit there is not enough water and the unit stays in the fill cycle causing the sump to overflow and send water down the drain constantly. Compressor will not run till the board senses that there is enough water to run.

This is the manual for your machine. Check out the pages that have examples of the nameplate information. It shows that the machine is approved for UL and NSF. Otherwise, I would suggest contacting Hoshizaki directly.
excessive freeze cycle=60 minutes. In almost every case, it's the water valve (sometimes called the fill valve) is leaking water continually into the sump. when the machine first starts, it begins it's cycle in the harvest mode. If the float switch is stuck, it stays in the fill/ harvest mode. Compressor runs and water circulates but no ice is being made. I'd start looking there. Turn the machine on, let it run for about 3 minutes, they very lightly tap the float switch. If it starts making ice, bingo, theres your problem. Let me know if I can be of any more help.
Most likely(50% of the times) Your Ice machine need a real cleaning. not just run clean cycle with ice machine cleaner. every 6 month call HVAC-R guys - machine will last half time longer if u schedule proper maintenance with them. I have seen It all: people try to call "friend", or someone who "knows" how this machines work. Real clean would take up to 3 hours for people who know what they doing. Here is one of my videos, when 3 beeps - long freeze cycle is not common and all others would offer You to get a new Ice Machine. Bill to the owner was 950$, New Machine 3450$ plus labour to install 600$.
