Here is a list of steps you can take to clear this "Remove and check cartridge" error on HP printers. They generally involve cleaning the contacts between the cartridge and the carriage in the printer.
Some people think this error is related to hard-coded expiration dates that are encoded on the cartridges themselves. HP will not confirm or deny this (I personally find it unlikely, but you never know...) In this case, performing a partial reset of the printer may clear the error.

Tips for a great answer:
This type of fatal cartridge error (i.e. "refer to documentation" / "incompatible cartridges", etc.) typically indicates the internal micro-electronics of the HP #74/75 cartridge are damaged. The cartridge's electrical wire runs at rear and lower side of the ink cartridge, are very delicate and are somewhat susceptible to ink attack over time, which can lead to premature failures. However, our test group has also seen these failures with brand new cartridges. In addition, the older the cartridge the higher the chance of an internal electrical failure. I suggest you first run a 'Tap 41' diagnostic test to check cartridges electrical health (this is a forced test); you may also bypass the error (temporarily) on most models which use HP 74/75 cartridges. In most cases the printer driver software can have errors while being in use or is shut down. So to reset remove your printer from the PC and uninstall the printer software. Now reinstall the printer software and then connect the Printer to be detected as a new hardware as it will be installed. Now check the printer properties to see the ink levels.
Activate head cleaning before a test is taken . Sometimes it is possible that the head is not reacting to the need of the PC command or can be an issue with ink drying or poor ink cartridge contacts.Remove and clean the contacts to reset.
