First of all you should make sure that the UPS is capable of handling the mains voltage from the country you're into now. After that just cut the cable as close as possible to the old mains plug then add a new one - all you need to be sure is which is the ground wire and that is very easy to find out with a simple ohmmeter. When you will go back to the US all you will have to do is to replace the plug.
