OVEN DOOR HINGE

Possible that the door hinges have accumulated dirt on the hinges or the joints within or the gaps on the hinges. Please wash off dirt and food particles , use a WD 40 to clean the hinges and try.
If not also try to remove and reset with the correct alignement after washing the hinges with diesel or kerosene and oiling them.

Door not fully closing. hinges seem faulty

Look for the alignment of the door, sometimes this can be due to dirt accumulation on the sides and prevents the door to come closer. Also the hinges could have gathered dirt and so does not come closer.
Clean the hinges and see if the door requires a reset.

La Germania oven won't stay lit. Stove is 10 years old and problem just started. It will light, but goes off after a few seconds.

Use a good air gun to blow off dirt inthe regulator. dirt in the nozzle and the burners.
Use a good brush to assist, or a thin metal wire to push through the gas passage .The air mixing section must be fitting correctly wedged.

The timer has gone on the cooker and I can't use the oven or the grill

Open and check for traces of dirt in the system due to insects. Clean the printed circuit board and check if the timer works. If not you will need to install a new one for using the timer. Hope the model uses the electronic type. If manual type try to clean and reset the clock action as a last resort. It might work with a good oiling, dirt cleaning using a good cleaner like WD40. hope you try this out. Good day

The element won't turn off. When I turn the knob,

Probably a broken element. It is shorting out against the element canister. If not broken and shorted. You have a bad timer.
