Question about Pitco Frialator 35CD Deep Fryer

Fryer was working before being cleaned but a cook started it up without the oil now nothing will work?

    My fryer wont start and i tried to reset the hilimit switch, nothing happens. some guy turned it on when there was no liquid. If it did go what would be the problem?

Hopefully it has kicked out on high limit thermostat. It depends a lot ofn what type of control you have on your fryer. If they are all mechanical controls, the high limit may need to be reset. Open the front door of the fryer. There are two thermostat bulbs in the fryer. One goes to the thermostat with the temperature dial, the other to the high limit thermostat. Hopefully the high limit thermostat that you have will have a small red button sticking out. Push that button in and then relight the pilot as you would normally do. If your high limit thermostat does not have a red button it is an automatic reset high limit. When the fryer pot cools below 300 degrees it should reset itself. If you have electronic computer controls on your fryer you will have to reprogram your thermostat settings.

How to Use Your Fryer:
  • Remove all packaging materials, sticker, and labels.
  • Clean the basket and pan with hot water, soap and a non-abrasive sponge. These parts are dishwasher safe.
  • Wipe the inside and outside of the appliance with a clean cloth.
  • Place the air fryer on a flat and even surface.
  • Put the basket in the pan.
  • Plug unit in to an approved wall socket.
  • Place the ingredients in the basket and then put the basket and pan back into the appliance. The fryer LED will light up.
  • Set your cooking time and temperature by either choosing one of the 8 presets or manually set it with the "+" or "-" buttons. See "Cooking Guide" to determine the right time and temperature.
  • Once you have set your cooking time and temperature, press the "Start" Button.
  • The heating icon and fan icon will be blinking and this means that the fryer is starting and is circulating the hot air in the fryer. NOTE: During hot air frying, you will notice that the heating up icon will blink and stays from time to time. When the heating icon is on, it means that the temperature inside the fryer has reached the set temperature. When the heating icon is blinking, it means that the temperature inside the fryer dropped and is below the set temperature and is currently heating up to the reach the set temperature.
  • Some ingredients may need to be shaken halfway through the cooking cycle (see "Cooking Guide"), To do this, pull the pan out of the air fryer by the handle, the air fryer will automatically shut down. Then shake the contents in the basket, then slide the pan back into the air fryer and it will resume the cooking cycle. CAUTION: Do not press the button on the handle during shaking; this will detach the basket from the pan.
  • When the cooking time has been reacher, the air blower will stop in 20 seconds.
  • Pull the pan out of the fryer and place it on a pot holder. The cooking pan is VERY HOT do not put on surface that can burn. NOTE: Oil from the ingredients will gather in the bottom of the pan, so be careful when pulling the pan out of the fryer.
  • To remove the ingredients, press the button on the handle of the pan to detach the basket. DO NOT TURN THE PAN OVER. PLACE ON A POT HOLDER.
  • Upon placing the cooking basket back into the air fryer, the air fryer will automatically go to the previous cooking cycle and will repeat the previous cooking cycle, press the cancel button to stop and reset the air fryer if desired.

Oil wears out and gets contaminated. If you overload the fryer the temperature will drop and your food will adsorb it and contaminate it. Watch the temperature when you load it, I had a limit of 10F drop. Pre-cooking your frozen items will help a lot. I would replace the oil on a weekly basis depending on your volume. Empty the fryer, clean it and filter the oil every day. This will help a lot.

Check the gas pressure; low gas pressure results in low oil recovery.Check also the fire tubes for soot build up, clean as needed. The quantity and quality of product should also be considered, overloaded and/ or frozen product reduces the oil recovery.

How to remove and clean burners of soot


You can purchase deep fat fryer cleaning solutions in a powder form or liquid....we sell them and other companies do too. The key is to boil your product, along with water in the fryer, using a L shaped brush to add in the cleaning process. You may need to do this a couple of times, if your fryer is really bad. If you boil it out, drain it and it's still really cruddy, then use a green pad and scrub what you can manually, then fill it back up, use whatever product you desire, boil it out again, using your L brush too. That will help clean out the drain hole where you drain the grease out, as well as the burners too. This is not an easy job, so if you think 15 or 20 minutes will do it, it won't... It's tough to clean restaurant equipment, as it's used normally 24/7 and not taken care of very well normally. Spills are burnt on, nothing is ever wiped up, grease spills over the sides of the fryer, and the crumbs in the bottom are burnt over and over, as some people don't strain their grease, just using it until it becomes unuseable... It's a tough job, but one we do quite often, and you just have to put in some elbow grease, use your cleaners, along w/the boil out method, a green pad or 2 or 3, and when you are satisfied and done.... Be super sure to rinse all the chemicals out of the frypot before you add any oil to it. Leaving ANY soap in the bottom of the frypot will help to break down your oil and spoil it way before it should, and that's expensive to replace over and over. Keep your temperature down to 325 degrees and that will help you save your oil as well. If you want to really extend your oil, buy and use a additive like Miroil. This is a oil additive that is used to extend the life of your oil, on a daily basis, sometimes twice a day, depending on your hours of operation/business. This additive , along with keeping your temp at 325, straining your oil, and rinsing your pot out well before adding oil will extend your oil so well, that you will never dump a whole vat of grease again....You will get a formula that will tell you how much grease to pull each day and you will replace that amount with new oil....If you have 2 fryers or 3, you would pull oil from your appetizer fryer and put it in the fish fryer, dumping that oil, whatever the measure is, like 3 cups or whatever. The idea is that your appetizer fryer has the lighter cooking foods in it and the fresher oil. The fish fryer can handle the older oil a bit better. All fryer foods will look/taste/ much better all week long, without your foods getting darker as the week goes on... Your foods will also absorb less oil, if you keep that temperature down to 325 instead of 350 or higher. That higher temp also helps to burn your oil up quicker, so keep it down....

Our staff cleaned the fryer last night and left the pilot on without filling the oil. . The fryer was with no oil and pilot on overnight. Will it lead to problems or we have to take corrective action.


If the main burners didn't light there shouldn't be a problem. If the main burners came on there could be some damage to the tank but there is no corrective action that can be taken. If damage was done it will usually leak cooking oil when filled. Was the gas valve turned to "pilot" or "on"?
