Can I add 50/50 antifreeze to top off my radiator and reservoir?

Yes. Some vehicles require special antifreeze, but there is a 'universal' type, and it comes pre-mixed at 50/50. This mix will protect from freezing to -40 degrees (assuming your cooling system already has 50/50 in it) and prevents boil over in the summer. A coolant checker is cheap, and you can pick one up at the auto parts store when you get the 50/50 mix to check the freeze protection level you currently have.
Theoretically, you only need to add the mixture to the reservoir and the cooling system will draw in what it needs, but I usually fill the radiator as well. Obviously, make sure the engine is cool before removing the radiator cap.

What is the high temperature range for the coolant

Your question isn't a simple black or white question, it's all relative to how many PSI is your radiator cap and what mixture of anti-freeze your running, and also, how old or new the anti-freeze (coolant) is.

The pressure cap on a cooling system is the key to raising the boiling point of the 50/50 mix of antifreeze and distilled water. For every pound of pressure cap rating the boiling of point of the above mixture raises 3 degrees. If you had plain water in your cooling system with a 15 pound pressure cap the water would boil @ 257 degrees. If you had a 50/50 mix of antifreeze and water the coolant would boil @ 265 degrees with a 15 pound cap. The boiling point would raise to 270 degrees if you had a 60% antifreeze mixture with a 15 pound cap. If you had a 70% mixture the boiling point would raise to 276 degrees.

Freezer cools to 10 degrees, refrigerator cools to 50 degrees

check if the fan is working and you are circulating air efficiently. You may check on the coils at the freezer if there are ice formation. I would suggest to have the ice melted by unplugging it and ensuring that all parts are ice free. Clean the unit while at it.

Wont cool below 50 degrees

Seems like the T-stat may have a dead spot on it since it started when you changed the settings. It is possible to trick (short) the t-stat to cause it to cool FOREVER, that would check your refrigerant charge is good. Would lean more toward t-stat problem first.
