This is not done in the alarm section. In the time view, press and hold the wave#/reset button (lower right) until it beeps (3 seconds). That's it. The watch should be silent now when cycling through and on the hour.
The Nixon site is not very helpful with instructions but since watches tend to be similar, try the following;-
One of the buttons is a "mode" button which steps through a settings menu and at some point you should come to the alarm settings "AL" perhaps. You will then need to experiment with the other buttons to turn the alarm to "OFF".

It is so simple. I struggled with this forever then called customer service. To turn off the hourly chime just press the bottom right (wave/reset) button while in the normal time/tide screen. You do not need to go through all of the modes. Just one button press from the home screen. When you see the target icon disappear you have done it.
