Question about Grilling
Okay, the best way to grill eggplant is to wash it and then stick a skewer through the center. I'm talking about a fairly good sized eggplant here. That way you can turn the eggplant every so often to prevent it from burning. Don't put it on the hottest portion of the grill because the outside will cook faster than the inside. When it begins to get soft all around the thickest part, take it off. You can peel the skin off (it is generally a little tough) or you can eat it cut up plain. I would take it back into the kitchen after roasting it and sautee it to give it some sort of garlic and balsamic and oil dressing. Yummy!
