If you haven't I would consider upgrading the firmware for your projector you can find the instructions and software at this link:
This definitely sounds like an HDMI issue, and it seems you have narrowed it down to an issue with the receiver. I would just use component as a work around as you should be getting the same video quality as HDMI. If you need to you may want to contact directv directly as this may be a known issue on their end.
