We have a new coffee house with new machines. Our rancilio sometimes has water coming out all around the basket when trying to pull a shot. What is causing this?

I'd also change the portafilter baskets at the same time. Rancilio ones are relatively cheap and sometimes get dented by baristas on the dump box bar.

You need to change the group head gasket. They only last about 1 year and then should be changed. Get 2 because they usually fail on Friday and you have a party on Saturday.
The gaskets get hard from the heat and don’t form to the filter any more so they leak.
When you get the new gasket.
Empty everything out of the machine (water tank, drip tray, etc.) Turn the machine upside down on a towel. This way you can see what your are doing.
Remove the filter screen and diffuser from the brew head. The black O-ring is your gasket. Carefully pry it out. Clean the opening good before you install the new gasket. Insert the gasket with the beveled side down (on the inside edge of the O-ring is the bevel). Once you have the gasket in place, use the portafilter to finish seating the gasket.

Descaling rancilio

Use Citric Acid.

  1. Dissolve about one tablespoon of citric acid in the water reservoir.
  2. Fill the boiler completely. Open the steam valve and start a hot water cycle until water comes out the steam vent. Stop the hot water cycle, close the vent.
  3. Let the boiler heat up about 5 minutes. Then turn off the power.
  4. Let the acid solution work for about 1/2 hour.
  5. Pull a 30 second shot to change the water in the boiler.
  6. Repeat flushing cycles (steps 3, 4, & 5) until the water looks clear. Refill the reservoir with water and acid as needed.
  7. Wash out the water reservoir.
  8. Pull 5 or shots to get the acidic water out of the boiler. Run a hot water cycle to clean the acidic water out of the steam vent.
  9. Let the unit come to temperature and look for leaks.
  10. Make some coffee and look for leaks.
  11. Froth some milk and look for leaks.

I have a Rancilio Classe 10 Espresso Machine and the water is flowing unevenly between groups. The difference between shots is 11 seconds to 27 seconds. I have backflushed each group and replaced both...

It could be the metering jets in the grouphead and or flowmeters. Try pressing both buttons at the same time to see if they give you the same volume and time.

Coffee exits portafilter too quickly. Rocky grinder with burrs set as close as possible. Grinders and rubber recently replaced.

Sounds like your group handle needs a new basket (the piece with all the small holes in it). Presuming that grind is set correctly and that coffee is being tamped enough? Sometimes as the basket gets older, the holes can get larger and coffee doesn't have enough time to infuse with the coffee before exiting.

Water flow is slow and noisy

The pump is a vibratory pump and it will make some noise.

Take the lid off the reservoir and watch at the hose coming from the relief valve (the short hose).
Pull a shot.
If water comes out of the hose, the relief valve is opening on high pressure. The pump gets extra noisy on high pressure too. This happens when the water flow is blocked due to coffee ground too fine, coffee tamped too hard, pluggage somewhere.
Pull another shot but this time with the basket removed from the portafilter.
If there is still water coming out of the short hose, you need to descale the machine. If there is not water com ing out of the hose and the pump is quieter, adjust your grind or your tamp.

Ok...I got heat. Hot water from wand. Steam from wand. Machine is cleaned 2 times a year with decalcifier. Screen cleaned every other month. Now...espresso come straight thru like there is no pressure...

The pressure is from zero to the opening pressure of the OPV. This should be about 10 bar when the OPV is cold. When the OPV is hot, the OPV spring is hot and a little more flexible. The OPV opens at about 8.5 bar when hot.

When the wand valve is open, you can get a lot of steam or water with not a lot of pressure in the boiler.

Take the lid off the reservoir and watch the hose from the OPV. It's the short hose.
Pull a shot with less than usual coffee in the basket.
If you see water flowing from the hose, the OPV opened.
If it did not open and there is little extract in your cup, buy a new pump.

When running the machine for a shot of espresso I get water leaking into it. It's a Rancilio Silvia, this occurs with every shot. All I've done is clean the machine.

Time for a new group head gasket and probably all the recommended preventative maintenance.

Rancilio Silva - coffee lost its punch

Try backwashing the group with purocaff.
Are you using coffee ground at the store or do you grind just before use?
How fresh is the coffee less than a month or more?
If more than a month(whole beans) it is no longer useful.
If more than a 3 days(ground), that is stale also. It will be very diffucult to get good espresso from that(not impossible, but difficult).

If using store ground, it cannot be ground older than a week(coffee loses flavor and taste minutes after being ground). Try getting less coffee more often and adjust the grind setting that you use. If you have always used setting 3 on the store grinder try 2.5.
If grinding at home adjust the settings on the grinder to a slightly coarser grind and fill the portafilter slightly over the top of the basket, now tamp to the indent(fill line) in the basket. that should be sufficient to pull a great shot.
