Question, does this pickup blow black smoke on idle or at a stop sign. If so check your map sensor might be plugged up or unplugged or bad.

Replaced engine coil, drove for 50 miles and check engine light starts flashing along with the motor running very rough unless my foot was on the gas petal, replaced EGR valve and still doesn't want to...

cap ,rotor ,spark plug wire , spark plug could misfire....
the check engine light flash because it's a severe misfire and fuel go to converter catalyst.

1993 gmc sierra k2500 rough idle with fan on

Normally I would say the a/c compressor is pulling on the engine causing a cylinder miss. The miss is probably there all the time, just worse with the a/c running. But it should do it when in a/c mode too.
The compressor runs in defrost mode to dry the air blowing on the windshield.
I would check for a bad spark plug or plug wire.

Hard to start, runs rough. hard idle. truck shakes when idling

Check the resistance of the plug wires, the gap on the spark plugs along with their condition and check the primary and secondary resistance of the coil. Willing to bet you have 2-3 plugs not firing due to gap or bad wires.

Nic, If the carburetor was dumping gas, remove the engine oil dip stick and see if it smells like gasoline. If it does you will need to change the oil.
Second, go back over your spark plug wires and verify they are on the correct spark plug. Start with the #1 plug wire, the firing order is 1,8,4.3.6.5.7.2...
Let me know how it turns out and we can go from there.
Good luck.

Cold rough idle and engine light flashed

Spark plugs/wires might need to be replaced. Check your spark plug gaps and check your spark plug module harness connection on both sides of the engine. The check engine blinking indicates short/misfiring. If there is short in the harness, you can check it by moving around the wires close to connector one by one while the engine is running. You might need to remove and ckean the Throttle Body.

resistance in plug wires ... degrades them. I find this as a standard GMC Sierra problem. Two sets on mine already. Coding is for misfires. Also, possible to unplug your MAS [mass air sensor] which will keep the 'check engine' light on at all times but it will no longer be in the circuit and could also be another solution to the problem. Changing out O2 sensors is just expensive since there are Banks A and B and each bank has 2 sensors. The cost from a part store is 80$+... hate to know what they charge you at a garage.

Go with the new wire set first.
