Question about Refrigerators
Irbys, It seems that either the thermostat is non functional or the wiring to it is shorting somewhere. This shorting keeps the thermostat out of the picture and gives full current thus freezing all the time. To check, remove the thermostat, put insulation tape on both ends of the wire and run the fridge. If it still freezes then there is a short in the wiring. The fridge should run only when the two ends from the switch are joined. Else the fridge should not run. Only the lights should come on.

Hi, no matter how low you turn down the thermostat, it will freeze up anything in the fridge because you have a faulty thermostat that cannot regulate itself again.
Normally the thermostat is suppose to regulate when it cools to a certain point, but once it gets faulty it will either freeze up things in the fridge or does not cool again.
You need to replace the thermostat...
