Hi, well you see the reason that a phone will hang up, as they say is usually because of one of a few things. First the battery, The battery Connections, both ON the battery and IN the phone, Now if the battery is OK. Then the other things that can cause it are a bad solder joint or connection in the phone, this can happen during manufacture, from thermal stresses, or being dropped or roughly handled. Now, either that or there is a Software Glitch, every now and again, because of poor coding or an unforeseen thing happening.
With the battery connections, well clean them make sure they are all clean and shinny, also make sure your battery is 100%. I always obtain a new one, as I have discovered that even brand new batteries can and do go faulty for NO apparent reason, many batteries also have electronics inside the battery, to control charging etc. Now this too can cause problems.
The other causes are less able to be remedied as for the software Glitching" You may be able to Re-flash your phone with updated software, if so, this may fix software Glitches, maybe even just reflashing would help. As for connectors, well one can go over them all and check, as for dry joints, well here. unless obvious are difficult to track down... and resolder if possible.
If this is your second phone, then maybe you need to change brand type etc.

My htc hd desire keeps switching itself off unless connected to the charger

This problem used to happen all the time with my last phone. After looking at the battery, I realized it was a little loose. Honestly, I just ripped off a small piece of paper and folded it a few times and stuck it in to make the connection tighter. Easiest way I ever fixed something, worked perfectly. Hope this helps.

Try taking the battery out of the phone, wait 30 seconds and put it back in. Many times this can solve all sorts of problems with cell phones.

My phone keeps freezing and restarting

it will end up costing you about 15 dollars but take it to a repair shop for the provider you use and they should be able to save all your info and flash a new version of the software onto your phone but it won't be free, that's the only way to fix that without buying a new phone.
