check the settings of the pressure control or if the fan is operating or if it has a defrost timer if the coil ices up the fan cannot pull air over the coil thus loosing cooling effect. possibly call a local tech im in logan city brisbane if that helps?

SOURCE: Nor-Lake walk-in cooler water leak

The evaporator drains into pan with a coil from the discharge line. The design is intented to sub-cool the liquid refrigertant as well as evaporate the condensation from the coil. Unfortunately the engineer started as career a shipping clerk and never received any further training.  There isn't enough heat or running time to evaporate the condensation from the coil.
The solution is fairly simple
A plastic tube  drains water out of the evaporator in the pan. You can extend the tube and add a defrost pan handled by your refrigeration wholesaler. Wire it so it is on whenever there is power to the unit.  This should get rid of the excess water. These pans are also used on some self contained coolers and freezers. They come in either 120 volts or 220 volts.

SOURCE: Kolpak walk-in hinge adjustment

loosen the hinges slightly on door and door frame. Shim the door even in the door frame so its not touching on any side. Tighten hinge hardware and see if that helps. If it doesn't you are probably due for some new door hardware.

Not exactly sure what you did but it is not designed for what you did nor are they designed for constant use. If there is ice building up on the condenser, the part that is in the room and not exhausting. If there is you need to put the part back before the unit destroys itself

Installing walk in box

This is the wrong section for Experts of this type of problem. We are Cars and Trucks Experts in this section; contact Refrigeration or something more closely matching your product.

I would imagine having reinforced floor for the weight, drains for defrosting, and cooling lines are a minimum. If the box sweats, you need mildew protection and clearance to circulate air over the box. Commercial units may use 220Volt power.

Big part will be if rollers are on bottom. If none, you are looking at forklift type carrier. Quite possible unit would be installed by removing exterior wall and inserting box, then replacing wall. You have to consider a minimum 8 foot opening which kinda limits moving through most interiors.

How can I adjust the temp. on a norlake walk in cooler?

There are many variations for a Norlake system
I assume the cooling coil hangs from the ceiling of the cooler and the condensing unit sits on the top?
The temperature is controlled by a control that is located in the condensing unit on the top of the cooler. This can be either;
\ a digital thermostat. You will need the progam key to get in
\mechanical thermostat. Adjust the dial setting
\ pressure stat. Adjust the dial setting

Probably best to get a technician in

First front seat the valve stem on the expansion valve (in all the way), then backseat the valve (out) six turns. Next pump the system down and change the drier, evacuate, open the "King-Valve" on the receiver and allow refrigerant to circulate. Rule of thumb (ole school) measure ambient temperature add 25*F convert this temperature to pressure for head pressure. Also check RLA (running load amperage).
Allow system to run about 2 hours then check TXV Superheat should be 6*F for low temperature.

After pugging in the water cooler, the fan starts running, all good water is cold but the fan never turns off. is this normal.

Yes except if it has a temperature control but would cut off only when it has reached the desired temperature, and water coolers are not the efficiency compared to a heat pump or air-conditioning, it only cools the air with the water running over the pads so whatever the temperature of the water is that’s the temperature the cooler will cool the air to. so in theroy it will only drop the temprature 10 to 15 degrees.
