What numbers on a dial mean the coldest my freezer keeps icing up what number should I have the dial on

Not sure what you mean with icing up, but in every freezer, vapour will freeze to the side.
If you want to go for sure, just buy a little thermometer for the freezer (must be going at least to - 30 Celsius) and hang it in the freezer. 3 or 4 star freezers should be at -18 Celsius.
Lower does not add anything to the quality of the food, or can extend the time you can preserve it in the freezer, but will cost more energy to keep it that cold. Lower than - 18 will shorten the time you can keep food in the freezer. -18 C is about -0,4 F.
so 0 or above is bad. -0,4 or below is good.

There is frost buildup on the backside of my freezer, could this be the problem behind the freezer and refrigerator not cooling

Hello,

Yes it absolutly the reason the refrig. section is not cooling, when it overfrost such as your experiencing, the freezer coil is one huge block of frost and no air can be passed through it into the refrigerator to cool it.

I have written this tip of what to check when it doesn't defrost automatically as its supposed too,

Freezer side builds up ice on back wall ,then both sides stop air flow

Hmm excessive moisture entering the unit - this can happen with excessive door openings or bad seal gaskets - make sure the seal is tight and not worn out. You are talking about frosting on the freezer outer wall right not behind the back panel ?

Try removing the back panel and look for icing/overfrost on the evap coils too - that could signal a defrost problem inw hich case you would need to inspect and change the control board or defrost timer components.

No cold air blowing into the refrigerator - temp too low

You have your own answer there - You have overfrosting and icing up behind the freezer, this will affect proper cooling - also if you have seperate freezer and refrigerator controls, it's possible the damper is not opening properly to let the cool air in. But in your case it sounds like a defrost problem. You will need to have a service person inspect your control board and defrost timer components - sometimes it's as simple as a board replacement due to a burnt resistor these things are the most common causes.

Good luck

The refrigerator not as cold as before

Things to check - door gasket seals for leaks, dirty condensers that need to be cleaned and dust removed, proper clearance to the back and sides of your unit.

Is your evaporator fan in the freezer functioning normally ? is your freezer cooling normally ? You might want to check at the back of your freezer panel for overfrost on the evaporator that will impact cooling performance. You can shut down your unit and try manually defrosting and melting the ice and then run your unit for a couple of hours to see if cooling is back to normal........ if it is, then your defrost system is malfunctioning and you will need to have the control board and/or defrost system components checked.

Otherwise, if overfrost and door seals and dirty condensers are not an issue and you have also tried raising the cooling dial up and compressor run-time is excessive then you may have a sealed system issue but rare and not the common causes. Most common causes are overfrost on the evap / defrost timer problems and damper (flaps that do not open properly).

you will need to have those checked if all else fails.

Freezer all of a sudden started major frost build up owned for approx 6 months mostly on left side seals all look tight french door style

I was going to suggest you have a leak - outside warm air / moisture coming in your freezer but you mentioned the seals are tight.

The next most common problem is your defrost system - refrigerators use 2 methods to control forst - timer defrost or adaptive - adaptive is used on newer ones and will defrost as needed - the timer version is based on your compressor run time - about every 6 to 12 hours or more or as needed, your compressor motor will turn off and you should see what looks like a red/orange heating element through the vents in your freezer and hot air coming out - on some freezers it is hidden and you won't see it, but you will notice hot air - you will hear sizzling sounds, and water dripping - that is your defrost kicking in - there should NOT be frost build up at all iny our freezer - if it is the case, then your defrost timer is faulty or the control board needs to be changed, all this is at the back of your freezer panel, you have the board, heating elements, defrost timer and limiter - all these components need to be checked when you have your unit serviced. Overfrost of the evap will cause your refrigerator and freezer not to cool properly as well.
