Turning on and off?

Hi - what do you mean the way he is turning on and off because my boyfriend told me i should turn the gas off first and then the knobs off...that is opposite of what i've always done...could that have broken something? also, would you recommend always burning off the grease after cooking because otherwise it will plug the burners - or is that not the case? thank you for any help you can provide! :)
