Question about Apple iPhone 3G
Sometimes, Mail app on your iPhone do not work properly because of the other apps running on the background. In order to close those apps on the background, you may need to refresh your device by turning it OFF and ON again (if you have older iOS version).
If you currently have iOS 4.0 or higher on your iPhone, you can close those backgrounded apps by double-pressing the HOME button then tap and hold an icon on the screen until it jiggles.
While they're jiggling, you will see a small red circle with a negative sign on each of the icons. You just need to tap each of that red circle to stop them from running on the background. Once you think you've closed enough to make your mail working fine, you can press the HOME button once to stop the icons from jiggling.
About theadding folders on your Mail, you can only do that on a computer, say Yahoo or Gmail. Create mail folders on your web browser and once you open your account again on the iPhone, those folders will automatically appear.

Please check these setting below perhaps you have that feature turned on? and this is why it is leaving data behind?
