Question about Imperial IFS40 Deep Fryer

Deep fryer My fryer is not kicking on when it should when the temperature drops below a certain level. I have to tap the temp control knob to get it to fire back up. Do you have schematics laying out what the switch looks like inside and do you have suggestions on how to repair it versus spending $300 canadian for a new switch.

Hey you should have to change the switches only

the same was happening with me and i changed the new switches

Well the temperature knob is connected to a potentiometer. you could possibly unsolder it and take it to your local electronics shop and have them match it and then resolder it back on. also check your wiring to see if you have any loose connected wires.

If tapping on the knob works then the potentiometer or rheostat that knob is on it most likely the culprit. Replacing it should not be very expensive. You would just need to open up the unit to find out the type and resistance values of the component. You should be able to buy an equivalent part at radio shack or any electronics parts supply store.

B&S deep fryer heats up to set temp..like 170c, then pilot light turns off.try to relit,no good.if i wait10..20min.I can relit it.but when reach temp,flame goes out again.


The high limit is shutting the fryer off. It is auto reset and that is why the fryer works after waiting. It sounds like the thermostat is not shutting off and the high limit is kicking in. You need to check the actual temperature of the oil.

I have a vulcan deep fryer and when i turn the knob up to 400 max it heat the oil but will cut off if i turn down to 375. the unit has been off. what part is needing to be replaced.


I'm unclear, if it has reached 400 you would expect it to be off at 375, until the temp drops below 375.
If I have misunderstood then apologies.

Fryer is cutting out after certain temp and tripping hi limit. I replaced Hi Limit, Thermopile and Thermostat and it worked great for two days and then kicked out again, tripped Hi Limit. I'm baffled...

Hi limit will trip at 450F.
Check your thermostat setting, then check its calibration, this way you will be able to verify where the problem is.
If the setting and calibration of the thermostat is good, check the hi limit sensing bulb, it should not touch the fire tube because if it does, it will sense high temperature and will cause premature tripping.

Fryer wont lite when temp knob is turned up to 350 range pilot is lit


Observe the thermostat when set to higher temp, you should hear a clicking sound as the mechanical contacts inside closes, at this point, burners should fire up.
Thermostat can be tested by checking the continuity across its terminals (using an ohm meter) when set to a temperature higher than the oil temperature.
Also, the thermopile must be free of soot or any form of dirt and the pilot must have good flame quality, gas pressure should meet the nameplate's requirement.

When set at 350 surface temp drops to 270 when being used


Oil temperature normally drops when product is loaded especially chilled or frozen products. Oil temperature should reach the set point before cooking time ends.

High limit kicks out fryer and pilot light can


Since you've mention the pilot light goes out at 400 degree F, then we are talking a gas Deep Fryer. The deepfryer usually use at 350 degree F for chips or else. Because the oil will start breaking down its quantity of frying very quickly over that temperature. Most people set at 350 degree F. Now we comes back to your problem, First you should have a deep fryer thermometer they espcially made for deep fryer, (You only mention 400 or better ) that make me think you're only guessing. Knowing the temperature is very important, most Hi limit is set at 420 degree F.
To me it seen the Hi Ltd control is working and that is why it cutting out the pilot when it reach its limit but we don't know what temperature that when the hi limit cutting out at.
When you have a thermometer, put it in the cold oil and turn the temperature to 100 degree F to see what the temperature control cutting out at. slowly increase your setting until it cutting out at 350 degree F . If you set at 250 degree F and the thermometer already reaching 350 degreen F then don't go any further , your temperature control is defective and need to be change a new one.
This is only the first step, you still have to check out the Hi ltd control to see how good its condition is,so far your information say it cutting out at 400 or better. But you've to be sure, because it is a safety control. Hope that will help you , God Bless.

The thermostat for a GF28 is a Cecilware L099A or F. It is not repairable, but any reputable commercial parts place should have it available for around $90 US.

Make the "tap" is to the thermostat, and not the gas valve. If it is the t-stat, try cycling the knob back and forth, low to high several times. This may free up the contacts in the t-stat. But in general, if tapping "fixes" it, you need a new one.

Hello

This sounds to me as if your thermostat is not cycling the unit off. But I can see a second problem as well there should be a high limit cutoff to prevent it from running on and boiling over. I would check both. The thermostat is the dial or knob to regulate temperature and the high limit is the safty to prevent boil over or run on.
