There are no settings in the BIOS for setting up master ans slave drives. The hard drives have jumpers for configuring master and Slave drives. If your hard drives are IDE/PATA hard drives and you intend to install these drives on the same IDE cable then you can set the jumper on Quantum drive as Master and the Maxtor on Slave. I suggest that you install the Quantum as master on the 1st IDE cable and the Maxtor as Master on the 2nd IDE cable for maximum data transfer rate between the two hard drived. Any other devices that are connected to these IDE cables will need to be jumpered as Slave devices.
Maxtor jumper as follow:
looking at the connector top row 5 pins, buttom row 4 pins.
the single pin on the top row is index pin.
master jumper is located between top 2nd pin and 1st buttom, counting from the left.
slave has no jumper on any of the pins.
cable select jumper is located between top 4th and buttom 3rd pin. counting from the left.

its simple really since the computer auto detects the new hardrive. the hardest part are the jumpers on the back of the hardrive. You see one hardrive has to be set to Master and the other has to be set to slave. the hardrives can connect to the IDE cable (the big flat cable inside your pc) in any order but they cannot be both set to master. The jumpers are easy to switch and the hardrive itself will have a diagram right next to the jumpers to show you how to move the jumpers to make the selection.
its a great idea to have two drives in your pc in case something happens to the first, but i always recommend a hard backup (cd/dvd).
I would guess that it is a diamond max driver, and therefore the jumper setting for slave should be no jumper at all. But in case I am mistaken, here are all the jumper setups for Maxtor drives, choose the one that looks like your setup and then choose the correct Slave setting:
