We purchased new fryers that are Imperial IFS40 and the salesman was going to check them out and demonstrate the fryers by putting water in them and turning them all the way up. It got so that the water...

Fryers use 2 types of stainless steel. Get a magnet and see if it sticks to the inside of the tank. If so...that is a lower grade of stainless. Use some steel wool to clean the rust spots and cover with vegetable oil. The tanks should be ok if you just bought them.

Flame is Orange? If so, propane is "choked", not enough air. Remove burners, clean each burner hole with a same size metal dowel (coat hanger works well) flush out inside of burner with garden hose, hi pressure air through all holes to dry. Replace burners ONLY after also cleaning chambers and chimney (garden hose and long brush). Do not forget to clean pilot light area too.
Most Imperials are pre-set air intake. Check gas pressure if able, 3" NG, 10" LPG. Good Luck

I usually boil water in mine to clean it out. I let it boil for one full timer. To clean the outside I just use Windex and some elbow grease. Hopes this helps.

Manufactures are constantly changing the properties in the stainless steel. They are dropping the nickel and alloy contents that they used to use, that's where the dull finish is coming from !
All manufactures are changing there materials to compete in this industry. These units may have been manufactured at diferent times.

How do I remove the portion that holds the oil to clean?

If I remember correctly, the manual that came with mine said that it is not removable. Pour out the oil and wipe the interior with a paper towel. (I wish it were removable!)

From http://www.rivalproducts.com/help.aspx?helpNav=1: How can I clean my fryer? - Unplug from outlet and allow unit to cool. Always turn control to OFF then disconnect plug from wall outlet BEFORE disconnecting BREAK-AWAY CORD. - Clean the outside of the fryer and lid with a damp cloth. CAUTION: Do not use abrasive pads or alcohol to clean the fryer. - Remove basket handle, if one is included. Frying basket can be washed in hot soapy water. - Rinse and towel dry carefully. - Pour out oil and discard properly. - Wipe the inside with paper towels to absorb excess grease.
