Was the compressor running? if the unit fails to make temp at a given setting and the compressor is running then turning down the cold control will not make it colder. the thermostat is a switch that turns the compressor and fans (if you have fans) on and off. the different settings only change at what temp the compressor etc. turns off. make sense? so listen for that compressor if it is running and the unit is war you have refrigeration system trouble: restriction, low charge, leak, etc...

Red light lit on freezer means that is not reaches operating temperature.
Most often the old freezer has three indicator lights.
- Green light : that it is brought to a power source and turned on - Red light : means that the temperature is above -18 degrees
- orange light : pressing the so-called SUPER-switch which means that the compressor is running continuously. The SUPER-button switch on a few hours before you begin deep-freeze foods. Freezing time depending on foods quantity (kg). With old freezer must be careful to turn off the switch S (orange light) when the red light goes out or when foods are frozen, otherwise after a few days may burn out the compressor. You should be following the instructions from user manual.
In new freezer managed by the electronics, this function has a predetermined maximum duration, in order to protect the compressor, and can have different marketing names like "shopping".....
Normally a fast freeze button is just that, it turns the compressor on permanently to freeze things down quickly.
I suspect that your run light is linked to the thermostat, and does not indicate that the freezer is turned off but that the temperature of the freezer is above the temperature set on the thermostat and the compressor is running to bring the temperature down. Once the temperature is at or below the thermostat temperature then the compressor will stop and the red light probably goes out, indicating the the freezer is at the right temperature.
It won't go out with the fast freeze on because to freeze food quickly the thermostat is by-passed and the compressor runs continuously.

You only require fast freeze if you are using the freezer for the first time, after a defrost, or if you add a large quantity of fresh food to an already running freezer. Most freezers require about eight hours at fast freeze. As to the temperature setting I would suggest you purchase a purpose built freezer thermometer (very cheap) and place that on top of the food. With the thermostat control set mid way (about 3 or 4) check the thermometer occasionally see what the temperature reads. It should be around -18C, if it's lower then set the thermostat lower at 2-3, if its higher set the thermostat higher at 4-5. Repeat this until the freezer temperature is correct.
This is normal. All commercfial freezers must defrost 3 to 5 times a day, or they will freeze over at the coil and then stop freezing. A timer in your freezer turns off the compressor and turns a heating element on for 10 to 15 minutes. During that time the coil heats and melts frost from the coil. Usually within 30 minutes the temperature will briefly rise to 20 t0 25 degrees F and then quickly drop down to 0 degrees F. The food rarely defrosts in this short period of time..
If the temperature outside the refrigerator drops below the temperature inside such as in a non heated garage the things in the refrigerator will freeze. Short of moving the refrigerator to a temp controlled place there is not much you can do about it.
