Freya, it sounds like you have an unlocked iphone (ie: not locked to any one network) and so its settings need preparing for whatever network you're now using. The settings that are pertinent in this case are the MMS ones.
If you post the network and the type of arrangement you have on here (ie: PAYG or contract), I can be more specific about where to get your settings however if you connect to iTunes, it should do all this for you.
If you use iCloud to back up your iPhone, you can easily restore your phone from iCloud. And this will bring back your data, however, the existed data on your phone will be erased.
If you want to recover your messages without losing the existed data on iPhone, you can use PhoneRescue to get back the lost messages, as its name expresses, is a professional iPhone data recovery tool.
for sending text messages : 1.go to your message settings and check the message center number to see if it is correct 2. call to your network operator customer care 3. request the message center number... 4.note it down 5. go to message settings>message center number 6. insert the number which is noted by you and save it

As a matter of fact, every time you sync data between iPhone 3 and iTunes, all previous data will be automatically backed up by iTunes and stored as a .sqlitedb file, which will be updated along with the later sync continuously. But those backup files can't be viewed or taken out unless you use some software using special algorithms to extract.
