When this happens it is not the probe, and neither is the control board. It is usually the probe holder or its contacts. Grease, dirt and oxide commonly cause the probe slot contacts staying open. In this case the control board will think that the probe has reached temperature when probe is still cold, because the board will read the open circuit (same as when probe reaches limit temp).
If the probe housing is OK, then the problem is usually the wiring harness.
