Question about Maytag Refrigerators
Your getting too much moisture in the unit and that is causing the freeze up. Defrost the unit and clear the ice out. Dry the area out and let it cool down. The reason you are getting so much moisture in the system is most likely a bad seal on the doors. Replace the seals and it should resolve your issue.

The ice getting collected.This itself indicates that the problem is related to defrost.You are manually defrosting the ice.But as per the procedure this should be done automatically as per the fridge settings.So the defrost heater and the defrost board needs to be checked.As you have tried manual defrost so this is the other possibility to be tried.
There is a thermistor on the top of the evaporator coil .This thermistor control the ice cooling on the unit.Replace the thermistor and check.If still the same problem then defrost control board is not functioning properly .It has to be checked and replaced.Also see if any of the internal electrical part of the unit got loose or not in contact.
Keep the unit unplugged for 24 hours then reconnect and recheck.
