Maker is making ice, but we are getting "icebergs" from the water dripping onto the finished ice

The problem you have is the water valve on the bottom rear of your machine is not shutting off completely after a fill cycle.
The ice maker sends a signal to the water valve at the end of the harvest cycle to refill the ice maker cavity for the next cycle. The fill time is approx. 7 seconds then the water valve has to shut off completely.
There is an internal problem with the valve.
The valve is non-serviceable. Replacing it with a new one will solve your problem. This is a very common problem and is not limited to your brand.

The valve and ice maker are separate items. The valve is located in the back bottom of the refrigerator. It is the item the water line from the house is connected to. Replacing it is a nuts and bolts procedure. Remove the water line from the house after shutting off the valve supplying it. It is bolted on, and only requires unscrewing the outlet hoses, as well as the electrical plugs powering it.
Once you have the new valve it will pretty well explain itself, and the procedure is not difficult.
The ice maker should not come into play, but as far as a diagram, there is none. The ice maker is non serviceable and if it fails, must be replaced as a complete unit.
