If the manual didn't come along with the phone, it is easier to just look on google for 'Uniden DECT 1480-3 Black Cordless Phone w/ 3 handsets DECT 6.0, Answering Machine, Caller ID' and it should pop right up!!
From your handset, you just have to press the mute button, your phone should start telling you the time, date, ect. press the #5 key and then the #8 key and start recording your message. When finished press the # 8 key again. Hope this helps

There are 6 pages to flip through and all you need to do is look at the picture for you phone. Click on it and it takes you to the phones page. On the upper right sid there is a link to download the owners manual in pdf form. Unfortunetly I can't tell your model from the information so I can't tell you the page or how to do it.
