Question about HP OfficeJet 6210 All-In-One InkJet Printer
When I use Office Max cartidges, copying documents printed on white paper results in a slight grey backgound on the entire copy sheet. Is this because the cartidge is not HP?

Yes, plastic cartidge holder is provided to you to store HP 337 (black inkjet print cartridge) as you remove it to install a new HP 338 ( Photo Cartidge).
Remember, below combination of Cartidges for used for specific purposes:
Black and color cartidge for general Printing of Documents.
Black, Color, Photo Cartidge to Print Photos.
Color cartidge , photo Cartidge and gray cartidge is specially used when you to print copies of photos with great quality.
