Make sure the filter is clean. make sure the evap is clean. sounds that you may have a defective t-stat or unit is under charged if filter and evap are clean. or you can run a freeze stat or a higher fan speed hope this helps you

2008 Winnebago. We get a sewer smell if we roll down a window while driving.

A motor home will pull sewer gas from the holding tank if you cause a vacuum in the vehicle. This will happen to all units but will be more pronounced with a toilet with a bad seal on the flush valve.
Keep the door closed for the bathroom when driving and use the dash vents for outside air with all the windows closed as this will pressurize the RV with air and not allow sewer gases into the unit.

Carrier Air V air conditioner keeps tripping the breaker. Sometimes after two or more hours sometimes after 20 minutes

There could be a number of reasons this is happening. The unit could be on the same circuit with something else overloading the circuit. There could be a problem with the compressor that is overloading the circuit when the compressor licks on.

Stops blowing air

remove cover at ceiling so you can see in at fins and see if they are frosting up bad. If they are, I suspect during AC installation, they didn't open up ducts on discharge properly and air flow is restricted, which will cause freeze up, especially if low flow from discharge ducts. I'm assuming it is a ducted system. You may have to remove or drop down entire ceiling assy, to see if the ducts into ceiling have any blockage. Sometimes they don't cut rubber roof material back far enough, or misaligned ducts and cause restricted flow to ceiling vents, which will cause unit to frost up, which kicks out compressor until frost is melted, then compressor kicks back in and cooling happens again.

Is an old unit worth fixing?

I recommend going with a new one. Both the coleman and the carrier are excellent and a whole lot more efficient that the 16 year old dometic.
