I know that your oven has an electric starter on it, no pilot, so I am thinking the valve is messed up and you have a tiny flame going. We just put a Viking in a house and the Grille was messed up on it, wouldn't reach temp, the owner went nuts calling the company and trying to get somebody out there to fix it. I fixed it for her, just a thermostat wire was off. Anyway, if you suspect a leak, You could check it yourself, by peeking at the back of the knob to the oven, see if it is blocked, broke, hitting something, peek down under the stove and see if it has a flame going in there, the broiler is way down on the bottom. Either that or call the gas co. they will check it for you. Even pressure test it to see if it is leaking. something is on. I don't think the light bulb will reach 200 degrees, maybe. Hope this helps.

Viking oven only one burner will light

http://www.vikingrange.com/MEDIA_CustomProductCatalog/m20127_f20254.pdf
Go to this web site. It has a manual on Viking ovens.
Usually, when the set temp is reached, the flame will cycle down to what is called "Minimum Blaze". This is to put heat into the unit at the rate that it leaves the unit. It helps to hold temp rather than cycle off and on. It cycles high when temp goes below set and then cycles down when set temp is reached.

The oven thermostat controls the oven temp. It is not working and you need a new one.

With a small screw driver and a steady hand. Set the knob to the temp u want then pull knob off. Inside the stem there is a little screw. Try and regulate it slowly also allow it enough time to reach the desired temp. Good luck.

Calibration

Electric ovens are calibrated behind the temp knob. Pull the knob straight off of the shaft and look at the back of the knob. There should be a metal slide with a scale and a little set screw. Loosen the screw and move the slide in the direction indicated for your needs.

Viking Dual Fuel 6 Burner 48" OVEN DOES NOT HEAT

I hate self clean functions - If you think about it - you should too. These ranges are equipped with electronic components and running self clean at 950 degrees will more than likely burn something out. A lot of complaints are because of the self clean. It's not worth it to self clean than to clean it yourself. And 200 dollars is a great price for something like this if it includes parts and labor. Good luck.
