SOURCE: Losing memory settings
On remote control before you shut off yor receiver press "TEST" button to save the memory. It will save every setting. Make sure to do that all the time after you change the setings.

The manual is pretty easily accessible on Onkyo's website. http://www.ch.onkyo.com/files.download/tx-sr605_manual_e.pdf
Setting a preset is as easy as pressing "Memory", using the arrows to select a number, and pressing "Memory" again.
To DELETE a preset, press and hold "Memory" then press "Tuning Mode".
